Achieving a smooth, professional texture is easy if you follow these two steps:
- The Rolling Boil Rule: Never add the flour to lukewarm water. Wait for a "rolling boil" before lowering the flame and adding the flour. This cooks the starch instantly and prevents lumps.
- The 5-Minute Transformation: When you first mix the dough, it may look rough. Once it cools enough to handle, dip your hands in water and knead it for 5 minutes. You will see it transform into a smooth, shiny ball.

Step 1: Roasting the Flour
Dry roast 1 cup of rice flour in a kadai on low-medium heat. Roast until the flour feels hot to the touch. Keep aside.
Step 2: The Tempering
Heat 2 tsp oil in a pan. Add mustard seeds. When they splutter, add hing, chopped chilis, ginger, and curry leaves. Saute well. Add the cooked karamani and coconut pieces and give it a quick toss.
Step 3: The Base
Add 2 cups of water and salt. Bring to a rolling boil, then lower the flame.
Step 4: Mixing the Dough
Gradually add the roasted rice flour with one hand while stirring continuously with a ladle to avoid lumps. Cook until the dough forms a single roll. Tip: Use a spoon to scrape the extra dough from your ladle back into the pan to avoid wastage!

To check if it's done, dip your fingers in water and touch the dough. If it doesn't stick to your fingers, it’s ready. Add a little ghee and let it rest until warm.
