 💧 Water Ratio

Use a 1 : 2.5 ratio
For every 1 cup of Godhuma Rava (Broken Wheat), use 2½ cups of water.

 👩‍🍳 Instructions

 1. Dry Roast the Broken Wheat

  • Heat a kadai over medium flame and add the broken wheat.

  • Dry roast for about 4–5 minutes until it becomes hot and aromatic. Make sure the color does not change.

  • Remove from the kadai and keep aside.

💡 Dry roasting enhances the flavor and helps the broken wheat cook beautifully without becoming sticky.

 2. Prepare the Tempering

  • Heat 2–3 tablespoons of oil in the same kadai.

  • Once the oil is hot, add mustard seeds and allow them to splutter.

  • Add chana dal and urad dal, and saute until they turn golden brown.

  • Now add the finely chopped ginger, slit green chillies, and optional dry red chilli.

  • Saute for a few seconds until fragrant.

 3. Cook the Vegetables

  • Add the finely chopped onions and saute until they begin to turn translucent.

  • Now add the chopped beans, carrot, green peas, and diced potato (if using).

  • Mix everything well and cook for about 2 minutes.

  • The vegetables should remain slightly crunchy as they will continue cooking with the broken wheat.

 4. Add Water

  • Pour in water using the 1 : 2.5 ratio.

  • Add salt to taste and a generous pinch of hing.

  • Mix well and bring the water to a rolling boil.

 5. Cook the Upma

  • Reduce the flame to medium-low.

  • Slowly add the roasted broken wheat while stirring continuously to prevent lumps.

  • Continue stirring until the mixture thickens into a porridge-like consistency.

  • Reduce the flame to low.

  • Cover with a lid and cook for about 5 minutes.

  • Open the lid once or twice in between and gently stir to prevent the upma from sticking to the bottom of the kadai.

 6. Final Touch

  • Once the broken wheat is completely cooked and soft, add a generous amount of freshly chopped coriander leaves.

  • Mix gently.

  • Switch off the flame.

  • Add fresh lemon juice and mix well.

  • Finally, drizzle one teaspoon of ghee (optional) and give everything one final mix.

  • Immediately cover the kadai for 2 minutes so the flavors blend beautifully.

  • Serve hot with your favorite accompaniment.
