  • Black pepper – 1 tsp (crushed or powder)
  • Fresh coriander leaves – generous amount (finely chopped)
  • Fresh jowar flour (sorghum flour) – 2 cups
  • Jeera (cumin seeds) – 1 tsp
  • Hing (asafoetida) – a pinch
  • Salt – as required
  • Water – as needed (use strained bottle gourd water)
  • Ghee / Oil – for cooking

  1. Prepare the Bottle Gourd
    Grate the bottle gourd and keep aside for 5–10 minutes.
    Gently squeeze excess water and reserve the water.

  2. Make the Dough
    In a bowl, add bottle gourd, onion, carrot, ginger, green chilli, black pepper, coriander leaves, jowar flour, jeera, hing, and salt.
    Mix well and add reserved bottle gourd water gradually.
    Make a soft, slightly moist dough. Rest for 5 minutes.

  3. Prepare for Shaping
    Use a banana leaf or parchment paper and lightly wet it.
    Keep a bowl of water nearby to dip your fingers.

  4. Shape the Roti
    Take a lemon-sized portion of dough.
    Place it on the leaf and gently pat into a thin round using wet fingers.
    Make 1–4 small holes for even cooking.

  5. Cook on Tawa
    Heat a dosa tawa well and grease lightly with oil or ghee.
