Ingredients

✅ For Tomato Base

  • Tomatoes – 5 to 6 (cut into halves)
  • Butter – 1 tbsp

✅ For Sauce

  • Butter – 2 tbsp
  • Garlic – 6 to 7 cloves (finely chopped)
  • Onion – 1 medium (finely chopped)
  • Chilli flakes – 1–2 tsp (adjust as per spice)
  • Basil leaves – handful
  • Salt – to taste
  • Pepper powder – 1 tsp
  • Oregano – 1 tsp 🌿
  • Grated cheese – as needed

✅ For Spaghetti

  • Spaghetti – 300 g
  • Water – 5 litres
  • Salt – plenty (like sea water 🌊)

👩‍🍳 Method

1️⃣ Cook & Peel Tomatoes

  1. Heat butter in a pan, add halved tomatoes.
  2. Cook for 5 mins till soft.
  3. Cool slightly & peel skin.
  4. Blend with basil leaves and 1 red chili (optional).

Tip: Skip chili if cooking for kids.


2️⃣ Prepare Tomato Sauce

  1. In the same pan, melt butter.
  2. Add finely chopped garlic & saute 5–10 mins on medium-low flame.
  3. Add onions, saute till soft & golden.
  4. Add chilli flakes, then pour in the blended tomato puree.
  5. Add salt & let it cook for 20–25 mins on medium flame.
  6. Finish with pepper powder and oregano for that Italian aroma. 🌿

3️⃣ Cook Spaghetti

  1. Boil 5 litres of water with plenty of salt (should taste like sea water).
  2. Add spaghetti & cook till 90% done.
  3. Strain and save the pasta water.

4️⃣ Combine Everything

  1. Take required amount of tomato sauce in a pan.
  2. Add spaghetti & 2–3 ladles of pasta water.
  3. Toss well and cook for 5 mins till the sauce coats evenly.
  4. Add cheese & mix well.

5️⃣ Serve

  1. Plate the spaghetti neatly.
  2. Top with grated cheese & basil leaves.
  3. Serve hot! 🍝✨
