A classic, mildly spiced potato curry that perfectly complements fluffy poori, crisp dosa, or warm chapati. Made with boiled potatoes, green peas, and a fragrant South Indian tempering, this dish is comforting, festive, and loved across generations.
🛒 Ingredients
- Potatoes – 500g (boiled and lightly mashed)
- Onions – 3 medium, finely chopped
- Green peas – 1 cup (frozen or fresh)
- Oil – 2–3 tbsp
- Mustard seeds – 1 tsp
- Chana dal – 1 tsp
- Urad dal – 1 tsp
- Hing (asafoetida) – a pinch
- Curry leaves – 8–10
- Ginger – 1-inch piece, finely chopped
- Green chilies – 3–4, finely chopped
- Turmeric powder – 1¼ tsp
- Salt – to taste
- Water – as required
- Fresh coriander leaves – for garnish
👩🍳 Instructions
🔹 Preparing the Potatoes:
- Wash and cook potatoes in a pressure cooker for 3 whistles with enough water.
- Let pressure release naturally. Cool, peel, and lightly mash. Keep some chunks for texture.
🔸 Making the Masala:
- Heat oil in a heavy-bottomed pan.
- Add mustard seeds; let them splutter.
- Add chana dal & urad dal. Fry till golden.
- Add curry leaves & hing. Mix well.
- Add chopped ginger & green chilies. Saute 1–2 mins.
- Add onions. Cook ~5 mins until translucent.
- Add turmeric. Mix and cook 1 minute.
- Add mashed potatoes. Combine well.
- Add green peas and mix.
- Add water to reach desired thickness (masala should be thick, not dry).
- Add salt. Stir and bring to boil.
- Simmer for 5 mins on medium, stirring occasionally.
- Adjust consistency as needed.
- Finish with chopped coriander. Turn off heat.
