Main Ingredients

  • Frozen green peas – 1 cup
  • Onion – 1, finely chopped
  • Salt – to taste
  • Water – as required
  • Crushed kasuri methi – 1 tbsp
  • Oil – 4 to 5 tbsp

Whole Spices

  • Clove – 1
  • Cinnamon – 1 small stick
  • Bay leaf – 1

Spice Powders

  • Turmeric powder – Β½ tsp
  • Coriander powder – 1 tsp
  • Cumin powder – 1 tsp
  • Red chili powder – 1 tsp
  • Garam masala – Β½ tsp

For Grinding

  1. Ginger-Garlic Paste

    • Garlic – 4 to 5 cloves
    • Ginger – 1 inch piece
    • Green chilies – 3 to 4
  2. Onion-Cashew Paste

    • Onion – 2, roughly chopped
    • Cashew nuts – 4 to 5
  3. Tomato Puree

    • Tomatoes – 2 to 3, blended smooth

  1. Prepare Pastes

    • Grind ginger, garlic, and green chilies into a paste.
    • Grind onion and cashew nuts into a smooth paste.
    • Puree the tomatoes separately and set aside.
  2. Saute Whole Spices

    • Heat 4–5 tbsp oil in a kadai.
    • Add clove, cinnamon, and bay leaf. Saute for a few seconds until aromatic.
  3. Add Ginger-Garlic Paste

    • Add the ground ginger-garlic-green chili paste.
    • Saute until the raw smell disappears.
  4. Cook Onions & Peas

    • Add finely chopped onion and saute until light golden.
    • Add frozen peas and saute for 1 minute.
  5. Add Tomato Puree & Spices

    • Stir in the tomato puree.
    • Add turmeric, coriander powder, cumin powder, red chili powder, garam masala, and salt.
    • Mix well. Cover and cook on medium-low for 5 minutes until peas soften.
      (Stir occasionally to avoid burning.)
  6. Add Cashew Paste

    • Mix in the onion-cashew paste.
    • Add water as needed to adjust consistency.
    • Cover and cook for 5–7 minutes, stirring in between.
    • Taste and adjust salt if required.
  7. Finish with Kasuri Methi

    • Add crushed kasuri methi. Mix well.
    • Switch off the flame and cover immediately to lock in flavor.
