Green Peas Masala | Matar Masala Curry

This curry is made by blending three different pastes β ginger-garlic-green chili, onion-cashew, and tomato puree β which gives the dish a rich, layered flavor. Frozen peas make this recipe quick and easy without compromising taste.

Main Ingredients
- Frozen green peas β 1 cup
- Onion β 1, finely chopped
- Salt β to taste
- Water β as required
- Crushed kasuri methi β 1 tbsp
- Oil β 4 to 5 tbsp
Whole Spices
- Clove β 1
- Cinnamon β 1 small stick
- Bay leaf β 1
Spice Powders
- Turmeric powder β Β½ tsp
- Coriander powder β 1 tsp
- Cumin powder β 1 tsp
- Red chili powder β 1 tsp
- Garam masala β Β½ tsp
For Grinding

Ginger-Garlic Paste
- Garlic β 4 to 5 cloves
- Ginger β 1 inch piece
- Green chilies β 3 to 4

Onion-Cashew Paste
- Onion β 2, roughly chopped
- Cashew nuts β 4 to 5

Tomato Puree
- Tomatoes β 2 to 3, blended smooth

Prepare Pastes
- Grind ginger, garlic, and green chilies into a paste.
- Grind onion and cashew nuts into a smooth paste.
- Puree the tomatoes separately and set aside.

Saute Whole Spices
- Heat 4β5 tbsp oil in a kadai.
- Add clove, cinnamon, and bay leaf. Saute for a few seconds until aromatic.

Add Ginger-Garlic Paste
- Add the ground ginger-garlic-green chili paste.
- Saute until the raw smell disappears.

Cook Onions & Peas
- Add finely chopped onion and saute until light golden.
- Add frozen peas and saute for 1 minute.

Add Tomato Puree & Spices
- Stir in the tomato puree.
- Add turmeric, coriander powder, cumin powder, red chili powder, garam masala, and salt.
- Mix well. Cover and cook on medium-low for 5 minutes until peas soften.
(Stir occasionally to avoid burning.)

Add Cashew Paste
- Mix in the onion-cashew paste.
- Add water as needed to adjust consistency.
- Cover and cook for 5β7 minutes, stirring in between.
- Taste and adjust salt if required.

Finish with Kasuri Methi
- Add crushed kasuri methi. Mix well.
- Switch off the flame and cover immediately to lock in flavor.

- Always saute ginger-garlic paste well to remove raw flavor.
- Adjust water for desired gravy consistency β thick for naan, slightly runny for rice.
- Crushing kasuri methi between your palms before adding enhances its aroma.
